Steps

Initially mix 1 Cup sooji & 2 cups milk into a big bowl. Mix it well. Cover & rest for minimum 30 minutes.

After 30 minutes, Check sooji. It has soaked well with the milk. Keep it aside.

Now in a heavy bottom pan add ghee. Let it melt. Then add sugar into the ghee. Stir it well. Gas flame should be low throughout making this halwa. Stir continuously until sugar melts.

Here we are making caramel of sugar. Cook the mixture for about 9-10 minutes. We have not used water in this halwa.

Sugar is melting & changing its colour. It's turning to brown in colour. It also starts boiling, at this stage turn the gas off. Stir sooji mixture from its bottom. Pour sooji mixture carefully & gradually into into this hot sugar caramel.

Turn on gas now.
Combine sooji mixture with caramel. If lumps occur, break it with spatula & mix into caramel. Once sooji cooks, it thckens. Halwa or sheera is ready. Garnish halwa with cardamom & crushed cashew. - 7
Once sooji cooks it turns thick & leaves ghee at sides. Serve this delicious halwa on any occassion.
