Fluffy Soft Omelet Rice (Omurice)

Ingredients

Serves 2 servings
  • [Sauce]
  • 2 piecesHayashi rice roux
  • 3.5 oz (100 g)shimeji mushrooms
  • 1bouillon cube
  • 1 1/2 tablespoons (20 g)butter
  • 1 cup (240 ml)water
  • [Chicken Rice]
  • 2 cupscooked rice
  • 4 slicesbacon
  • 1/2onion
  • as neededKetchup,
  • as neededSalt and pepper,
  • 1 tablespoonvegetable oil
  • [Soft Omelet]
  • 4eggs
  • 2 tablespoonsheavy cream
  • 1 tablespoongrated Parmesan cheese
  • 1 tablespoonmayonnaise

Steps

  1. 1

    Make the sauce. Heat the butter in a small saucepan, add the shimeji mushrooms separated into small clusters, and sauté. Add the water and bouillon cube, bring to a boil, then add the Hayashi rice roux. Simmer on low heat for a few minutes.

    Make the ketchup rice. Cut the bacon into bite-sized pieces and finely chop the onion. Heat the vegetable oil in a frying pan, add the bacon and onion, and sauté.

  3. 3

    Add the cooked rice to the pan, breaking it up as you stir-fry. Season with ketchup, salt, and pepper to taste. Once done, transfer the rice to serving plates.

    Make the soft omelet. In a bowl, combine all the ingredients except the butter and whisk well.

  5. 5

    Heat a frying pan over medium heat, add the butter, and once it's half melted, pour in the egg mixture. Stir gently a few times with chopsticks or a spatula.

  6. 6

    When the bottom just starts to set, remove from heat and place the omelet over the rice. Pour the sauce around the omelet.
