Easy Fluffy Oyakodon with Just One Egg!

Just add potato starch to the eggs and pour over the chicken—each person only needs one egg to make a fluffy, creamy oyakodon.
Recipe background:
Adding potato starch to Japanese omelets makes them fluffy, so I tried it with oyakodon and it turned out soft and creamy!

Ingredients

Serves 2 servings
  • 2eggs
  • 1/2onion
  • 1/3-1/2 piece(about 2 strips) chicken tenderloin
  • 2/3 cupwater (150 ml)
  • 3 tablespoonsmirin
  • 2 tablespoonssoy sauce
  • 1 teaspooneach sugar and granulated Japanese soup stock
  • 1 teaspooneach potato starch and sake
  • 2 teaspoonspotato starch
  • 1little mitsuba (Japanese parsley) or nori for topping
  • 2 bowlscooked rice

Steps

    Slice the chicken into bite-sized pieces and rub with the potato starch and sake mixture. Thinly slice the onion and cut the mitsuba into bite-sized pieces.

    In a frying pan, combine the water, mirin, soy sauce, sugar, and soup stock. Add the onion and chicken, then heat. Once it comes to a boil, skim off any foam and simmer until reduced.

    Dissolve 2 teaspoons potato starch in an equal amount of water. Crack the eggs into this mixture and beat well, cutting through the egg whites.

    When the onion and chicken are cooked and most of the liquid has evaporated, pour in the egg mixture.

    Stir gently with chopsticks, remove from heat, sprinkle with mitsuba, and let the residual heat finish cooking the eggs. Serve over bowls of rice and enjoy!
