Trim any excess fat from the chicken and cut it in half. Season both sides with a pinch of salt and pepper.

Heat a skillet over high heat and add a little oil (if using a nonstick pan, you can skip the oil). Place the chicken skin-side down and sear.

Once the skin is nicely browned, flip the chicken and brown the other side.

Wipe out any excess oil, add the sake (or wine), cover with a lid, and cook on low heat for 3–5 minutes until cooked through.

Remove the lid, add the butter, soy sauce, mirin, and garlic powder (if using). Cook over medium heat, turning the chicken to coat it in the sauce until it becomes glossy.

Slice the chicken into bite-sized pieces, plate, and pour any remaining sauce from the pan over the top. Enjoy!
