Ingredients

Makes 5 eggs
  • 5hard-boiled eggs
  • 1/2 cupwater (100 ml)
  • 2 tablespoonsmirin
  • 2 teaspoonssalt
  • 1 teaspoonJapanese soup stock powder (dashi)
  • 1/2 teaspoonblack pepper
  • 1 teaspoonsesame oil

Steps

    Combine all ingredients marked with ● in a bowl and microwave for 1 minute at 600W. Stir well to mix.

    Place the peeled hard-boiled eggs, the sauce from step 1, and the sesame oil into a resealable bag. Marinate the eggs.

    Refrigerate and marinate for at least half a day or up to 1 day. The eggs will absorb plenty of flavor even though they stay pale.
    Note: Don't marinate too long or the eggs will become too salty!

    Reuse the marinade: Add 1 head of bok choy to the leftover marinade in a bowl, cover with plastic wrap, and microwave. This makes a great topping for ramen or dipping noodles.

    Reuse the marinade (option 2): Marinate chicken in the leftover sauce, then use it to make fried chicken. Thanks to Noa Mama for this tip!
