Sift the all-purpose flour. Bring the butter to room temperature. Take it out of the fridge early.

Mix the butter well and beat the egg thoroughly. If using granulated sugar, break up any lumps by hand.

Add the sugar to the butter and mix well. Then, add the egg in about three parts, mixing a little at a time. Mix thoroughly until it becomes creamy.

Add the all-purpose flour to the butter mixture and gently fold it in with a spatula.

If adding cocoa or other flavors, divide the dough here and mix in the desired ingredients.

Finally, gather the dough into a ball by hand. Knead it a little, but be careful not to over-knead. In warm weather, you can finish mixing with a spatula.

Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes to 1 hour. Do not flatten the dough too much, as it will be easier to roll out later.

Roll out the dough to a thickness of 1/5 inch (5 mm) and cut into your favorite shapes. Line a baking sheet with parchment paper.

Preheat the oven to 340°F (170°C) and bake for 15 minutes or until the edges are lightly browned. (The cocoa cookies may be harder to judge.)

Adjust the baking time as needed, as ovens vary. If the edges aren't browning, add more time to prevent a floury taste.
