Ingredients

3 cups rice
  1. 25chestnuts (about 14 oz/400g, peeled weight)
  2. 1 teaspoonsalt
  3. 1 teaspoongranulated dashi (Japanese soup stock powder)
  4. 1 tablespoonsake (Japanese rice wine)
  5. 1 tablespoonmirin (sweet rice wine)
  6. 1 tablespoonsoy sauce
  7. 3 cupsuncooked Japanese short-grain rice (about 540 grams)

Steps

    Peel the chestnuts. For this recipe, I boiled them first to make peeling easier.

    Rinse the rice and add slightly less water than you would for 3 cups. Add all the ingredients marked with ★ (salt, dashi, sake, mirin, soy sauce) and mix gently.

    Add the chestnuts, then start cooking the rice in your rice cooker.

    When the rice is done, gently fluff it to avoid breaking the chestnuts.
