Prep: Wash the lemon thoroughly and cut into thin slices. Set aside.

Directions: (1) In a clean pot, bring 6 1/3 cups (1500 ml) of water to a boil. Add the winter melon tea brick and stir over low heat for about 10 minutes until fully dissolved. (2) Let the winter melon tea cool to about 176°F (80°C), then add the gelatin powder and mix well. Add the lemon juice and stir again. Tip: Add the lemon juice only after the tea has cooled slightly; do not add it while the tea is very hot.

(3) Pour the winter melon tea mixture into serving cups. Let cool slightly, then place lemon slices on top. Refrigerate for 1–2 hours until set.

I wanted to come up with a cold dessert using watermelon. I love both Bavarian cream and gelatin desserts, so I combined them in one glass to enjoy them both.Dissolve the gelatin by microwaving for about 20 seconds. If you heat it too much, the gelatin won't set, so be careful. In step 4, stir the base mix until it's the same consistency as the soft whipped cream before combining the two. (Softly whipped means that it feels a bit thick.) Add the jelly after the Bavarian cream has set. I used powdered sugar since it dissolves easily, but you can use regular sugar too.
