I had never bought Readymade Sambar Masala so I never made Sambar for a long time even after many years of settling in Southern India. Then one fine day, I made a decision of making Sambar powder for myself and then doing Sambar for first time. That’s when the below recipe of Sambar powder was done and it is a perfect combination of spices to get a perfect Sambar.

Ingredients

  • 1 cupUrad Dal
  • 1 cupChana Dal
  • 1 cupCoriander seeds
  • ½ cupFenugreek (Methi seeds)
  • 4 tbspsCumin seeds
  • 5 tbspsMustard seeds
  • 18 – 20 nosCardamom Green
  • 18 – 20 nosCloves
  • 5 tbspsCoconut powder (Optional)
  • 50 gmsChilies Dried Red (I have used Kashmiri Red )
  • 1 tspHing (Asafoetida)

Steps

  1. 1

    Dry roast Red Chilies till it turns dark but should not burn.

  2. 2

    Slightly roast the coconut powder till it gets golden.

  3. 3

    Roast All the Dals, Methi, Cumin, Mustard, Cardamom, Cloves and Coriander well till it turns golden brown and you get a nice aroma.  Do not overbrown or burn.

  4. 4

    Mix together all the above roasted ingredients and add hing to it.

  5. 5

    Grind to fine powder

  6. 6

    Store it in an airtight container for upto 4 months.
