Drunken Shrimp

Besides simply boiling fresh shrimp, making drunken shrimp is also delicious! The shrimp are so sweet and flavorful.

Tips:

This time I used Shaoxing Huadiao wine, which gives a unique and tasty flavor.

If you prefer a stronger wine taste, you can adjust the ratio of broth to wine as you like.

Afterthoughts:

This is a very simple dish. If you make too much at once, you can freeze some to keep it longer.

  2. 1 1/3 poundsfresh shrimp (about 600 grams)
  3. 1 sliceangelica root (dang gui)
  4. 3-5 slicesastragalus root (huang qi)
  5. 1 handfulgoji berries
  6. 3-4dried red dates
  7. 1 pinchsalt
  8. as neededShaoxing wine (Huadiao wine),
  9. 1 splashrice wine

    Rinse the shrimp, then trim off the sharp tips on the heads and the whiskers.

  2. 2

    In a pot, add the angelica root, red dates, astragalus root, and goji berries. Pour in 2 cups (about 480 ml) of water. Bring to a boil, then add Shaoxing wine (Huadiao wine) and rice wine. Let it simmer briefly, add salt to taste, then let the broth cool and set aside.

  3. 3

    Bring a separate pot of water to a boil. Add the shrimp and blanch until they turn red, then remove them.

  4. 4

    Once the shrimp have cooled, soak them in the prepared broth. Refrigerate for one day to let the flavors develop.
