Amazing Sauce! Our Family’s Hiyashi Chuka (Chilled Ramen)

A chilled ramen sauce with a hint of lemon! Pour it generously over hiyashi chuka on hot days to help you get through the summer.

I used to buy the store-bought kind with sauce included. But since I like to add lots of toppings, I always ran out of sauce. When you make it at home, you can use as much sauce as you want.
You can also pour the sauce into a small plastic bottle and freeze it for lunchboxes. By lunchtime, it’s perfectly thawed and ready to use!

Add the soy sauce, vinegar, and mirin to a small saucepan and bring to a boil. This mellows the flavors.

Remove from heat. Add the sugar, water, chicken bouillon powder, lemon juice, sesame oil, and sesame seeds in order, mixing well after each addition. Chill in the refrigerator.

Cook the ramen noodles in plenty of boiling water. Rinse with water, then chill in ice water. Prepare your favorite toppings.

Arrange the noodles and toppings in a bowl. Pour the well-chilled sauce over everything and enjoy! Our family likes to add a little mustard. Mayonnaise is also delicious!
