It's a flat leavened oven baked italian bread, in some places it's called the pizza bianca it's a similar style to a pizza, and can be served as a side dish or as sandwich bread.

Mix water, yeast and sugar, let it to proff 10 minutes

In a bow add oil in the flour and mix till well incoporated

Add your yeast mixture and mix until no flour is left, use the lift and cover method of mixing the dough

Add salt mix and cover in a warm environment let it rest for 1 hr, your dough should be sticky like below.

After an hour fold and lift your dough ten times and then leave it to rest for 12 hrs/ overnight. Until doubled in size

Roast your garlic in a tinfoil for 40 minutes at 180° then squeeze it out and add olive oil to mix it well

After 12 hrs, transfer it to a baking pan, oil your pan with enough oil and place your dough on it then using the kneading method of fold, lift and cover 3 times make a square and lay it on the pan to rise for another 3 hours.

After 3 hours this is how it should look like

Add more olive oil, create the dimples with your fingers and add the crushed garlic and any other toppings you have.

Bake for 25 mins @ 180° or until golden brown

Serve as sandwich or side dish
