100% Watermelon Granita – Latin Style

A refreshing, icy treat made with 100% watermelon! This is a twist on the Mexican watermelon drink 'Agua de Sandía.'
Recipe background:
In Cancun, every dish I tried was loaded with chili sauce, chili powder, and lime—even desserts and drinks! I love sweet treats, but I’m not a fan of sweet drinks, so I turned that watermelon juice into a granita instead.

Steps
- 1
Cut the watermelon into chunks and remove the seeds. Cut into 3/4-inch cubes (about 2 cm), then place in a zip-top bag with the sugar.
- 2
Mash the watermelon with your hands to break it up. Squeeze out the air, flatten the bag, and freeze until solid.
- 3
Break the frozen watermelon into pieces and process in a food processor until it becomes a slushy texture.
- 4
If you don’t have a food processor, transfer to a container and, as it starts to freeze, scrape with a fork several times to create a fluffy texture.
- 5
When serving, sprinkle with chili powder and salt if you like, and squeeze fresh lime juice over the top. Enjoy!
