Crispy Sesame Fried Bananas

Fried bananas... a legendary Indonesian snack, right? Can't say no to fried bananas, especially when enjoyed with coffee or tea. This recipe is the best in my opinion. I once made banana batter without melting the margarine first, and it turned out clumpy and sandy, which I didn't like. But with melted margarine, it blends easily and adds a savory taste. The original recipe doesn't use sugar because the bananas are already sweet, but I add it because even after frying, the sweetness isn't overwhelming; it balances well with the margarine and added salt, so adjust to your taste.

Ingredients

  • 1 bunchuli bananas
  • 2/3 cuprice flour (about 80 grams)
  • 1/3 cupall-purpose flour (about 50 grams)
  • 1/3 cupcornstarch or tapioca flour (about 50 grams)
  • 2 1/2 tablespoonsmelted margarine (about 35 grams)
  • 1/3 teaspoonbaking soda
  • 1/4 teaspoonvanilla powder
  • 1/4 teaspoonsalt
  • 2 tablespoonsgranulated sugar (my addition)
  • 2/3 cupwater (about 150 ml)
  • Sesame seeds to taste (optional)

Steps

    Mix all the dry ingredients (rice flour, all-purpose flour, cornstarch, baking soda, vanilla, salt, granulated sugar).

    Gradually add water while stirring.

    Add melted margarine and mix well.

    Add sesame seeds to taste.

    Cut the bananas as desired; I cut them into fan shapes.

    Heat cooking oil over medium heat.

    Dip the bananas into the batter, then place them in the hot oil.

    Fry the bananas until golden brown. Remove, drain, and serve while warm :)
