Tteokbokki or simmered Rice cake is a popular Korean made from small sized tteok (Rice cakes), Gochujang chilli paste, Soy sauce, Garlic and Sesame Oil. It is Vegetarian. However if Fish cakes, Fish broth or meat is added to it, it becomes a Non-Veg version.
Basically Tteokbokki is pretty much bland and the sauce that is added to it gives it an amazing flavour. If Tteokbokki is store bought, it usually comes with readymade sauce sachets. It's quite easy that way. But if the sauce needs to be made at home, then Gochujang paste is a must. The authentic recipe calls for it. Otherwise one can use Kashmiri or any other Chilli paste to make the sauce. But of course it would not be an authentic recipe. Gochujang paste is easily available online on many grocery apps. This spicy Rice cake dish has a chewy texture yet soft and supple. The texture and flavour is incredibly awesome. The toppings or the garnish can be different. You can add one or all together as well. The main attraction of this spicy dish is the spicy sauce. That's it.

Since the rice cakes are not homemade, they need to be soaked in water for about 5-6 minutes and then boiled for about 2-3 minutes to soften and be spongy.

Heat oil. Add the chopped or minced garlic. Saute for a second. Add the soy sauce, sugar, Korean hot chilli paste gochujang or the readymade packet provided in the store bought rice cakes.

Add water and bring it to a boil. Add the boiled rice cakes to it. Cook on a high to medium heat for about 5 minutes and then lower the heat. Cover and simmer until it thickens and the flavours get nicely mixed. Keep the consistency to a semi thick.

Remove from the heat. Adjust salt. Garnish with chopped green onions and sesame seeds. Serve it right away. Enjoy!
