Mandazis are Kenyan local dishes which are perfect for breakfast accompanied by a cup of tea. They can also be taken with other food like beef stew.

You start by making a dough. This you add the yeast, sugar and cinnamon to the flour in a bigger container. Then in another bowl whisk the eggs into the milk.

Then start kneading by adding the whisked egg and milk into the mixed flour. Add a little by little until you have a soft firm dough. You can knead for 20 minutes to get a sift and firm dough or until it stops sticking to the sides of the container.

Once you have a dough with a smooth surface, cover the dough and allow it rest for 30 minutes.

Place the dough on a lightly floured surface, then roll it on that floured surface into almost 1.5 cm thick piece.

Cut the dough into preferred sizes using a knife. Then set aside for deep frying.

Heat the oil in a frying pan/ karai like mine until the oil is heated enough. Then gently dip the mandazi pieces to cook until light brown on the first side then turn to cook on the second side.

Serve them warm with tea or stew
