Ingredients

6-8 hours
8 servings
  1. 2 lbsboneless skinless chicken breast
  2. 1 tbspchilli powder
  3. 1 tbspcumin
  4. 4 clovesminced garlic
  5. 1 tspsalt
  6. 1 tspcrushed red pepper flakes
  7. 12 ozyour favorite beer
  8. juice and zest from one orange
  9. juice and zest from 2 limes

Steps

    Mix garlic and spices in a small bowl.

  2. 2

    Cover chicken in spice mixture and place in crock pot.

  3. 3

    Pour beer over chicken, squeeze in the orange and lime juice, put the zest of the orange and both limes in as well. (The zest gives the chicken a very citrus taste, zest only half the orange and lime if you want to dial it down a little.)

    Cover and let cook 6-8 hours on low.(4-6 hours on high)

  5. 5

    Shred the chicken with 2 forks. Put into a broiler pan, pour 1/3 cup of remaining juice over the shredded chicken and place under the broiler for 5 min, stir and repeat untill chicken gets a little crispy on the edges.

    Ive also done this on the grill, have your grill set up when the chicken comes out of the crock pot, put it on a sheet pan, set it on your grill, douse your chicken with the juices. Repeat until you are out, and the chicken has soaked up all that flavor.

    Serve in your favorite mexican dish. Works well in tacos, burritos, and enchiladas.

Tips

You can make a bunch of this up and portion it out in 1 pound bags and freeze. Also goes great in salads, pastas, sandwiches and soups.
