Eggplant 🍆 with Tahini and Chickpeas

Soak chickpeas overnight and cook.

Warm up the oven to 400F. Wash and stab with fork eggplants. Bake 30-40 mins until ready.

Peel eggplants 🍆 and dice.
- 4
Mix eggplants with chickpeas. Add lemon juice, tahini, tamari, finely shred ginger, chopped parsley, black pepper and salt to taste. Store this mix until you want to serve.

Before serving add to each meal 1 tomato and 2 cucumbers. Adjust salt pepper to your taste.
