Ingredients

Serves 4 servings
  • 2.6 lbsbeef chuck (about 1,200 grams)
  • 6large carrots
  • 2beef bouillon cubes
  • 1 pinchsalt, pepper
  • 2large yellow onions
  • 2 1/2 cupsred wine (about 600 ml)
  • 1 teaspoonbeef bouillon granules
  • 1bay leaf and 1 pinch thyme
  • 1 packetinstant brown gravy thickener (such as cornstarch for sauce)
  • 1 tablespoonbutter

    Sear the beef over high heat in the butter until browned.

    Set the beef aside with the bay leaf. Season with salt, pepper, and a pinch of thyme, then cover.

  3. 3

    Sauté the onions in the beef drippings (add more butter if too dry). When lightly browned, add the beef bouillon cubes, bouillon granules, and a splash of wine to deglaze the pan.

    Add the carrots and mix everything together.

  5. 5

    Return the beef to the pot, reduce to low heat, and stir to combine.

  6. 6

    Add the remaining wine (enough to cover the beef) and stir. Simmer on low heat for at least 2 hours, or longer for very tender meat.

    Thicken the sauce to your liking with the instant gravy thickener.

    Serve with French fries, mashed potatoes, or your favorite side. Enjoy!
