Prep the Fish:
Rinse the basa fish fillets and pat them dry with a kitchen towel to remove excess moisture. Slice into desired lengths. - 2
Marinate the Fish:
Place the basa fillets in a large mixing bowl. Add salt, white and black pepper, turmeric powder, spicy and Kashmiri red chilli powders, mustard oil or olive oil and lemon juice. Mix well to coat all sides of the fish. Let it rest for 15 minutes. - 3

Add Spice Mix:
In a small bowl, combine mustard oil, garlic powder, ginger powder, and tomato puree. Mix and add to the marinated basa fish, coating each fillet well. - 6

Preheat Gas Oven Tandoor:
• Place the base tray on a small burner, allowing safe cooking on high flame.
• Pour 300 ml water inside the base tray.
• Grease the tandoor tray with butter or oil.
• Fit the tandoor tray over the base tray.
• Place the heat reflector and cover with the lid. Preheat on high flame for 5 minutes. - 10
Bake the Fish:
Remove the lid and arrange the spice-coated fillets on the greased tandoor tray. Cover and bake for about 15-20 minutes, or until the fish is cooked through. Brush with oil or butter halfway through cooking. Adjust cooking time based on the fillet thickness and flame intensity. - 11
Char for Extra Flavor:
For a traditional tandoor taste, let the fish char slightly. Brush with a bit more butter if desired. - 12
Serve:
Transfer the baked spicy basa fillets to a serving plate. Garnish with a fresh squeeze of lemon juice and serve hot. Enjoy! - 13
