In a bowl, combine the following ingredients: 2 cups warm milk (about 480 ml), active dry yeast, and 1 cup sugar minus about 2 tablespoons (about 200 grams). Mix well and let rest for about 15 minutes.

Next, add 1 egg, 1/2 cup oil (about 120 ml), and the zest of a lemon or orange (or vanilla, but zest is preferred for better flavor). Mix well. Add flour, baking powder, and a pinch of salt. Use a spoon to mix in the flour until you have a dough. Knead on a work surface for about 5 minutes, then let the dough rest for 1 hour to make the brioche soft and fluffy.

After 1 hour, punch down the dough and shape it into small balls. Form them into braids or shape like hamburger buns. After shaping, let them rest on a baking sheet for about 15 minutes.

After 15 minutes, brush the tops with a mixture of egg and a little milk. Sprinkle with sesame seeds. Bake the brioches at 400°F (200°C) for about 15 minutes on the lower rack, then 10 minutes on the upper rack. Enjoy your very soft brioches!
