Add oil to a heated pot and Add mustard seeds.

When the mustard seeds start to splutter, add chopped onions, ginger-garlic paste. Let it cook until the onions turn golden brown.

Add curry leaves and all the spices to the pot and stir the mix for about a minute. Add chopped tomatoes and let it cook until the tomatoes are soft.

Add diced butternut squash and mix well.

Let the butternut squash cook for about 10 minutes. Add about 2 cups of hot water and let it cook for about 30 minutes or until the butternut squash turns soft.

Add coconut milk and let it boil for a few more minutes. Serve with your favourite rice.
