In Melbourne where I live, frozen Edamame Beans already removed from the pods are available from most supermarkets. These pancakes are full of protein.

Ingredients

10 minutes
6 Pancakes
  • 1Potato *about 180g
  • 1Spring Onion *finely chopped
  • 1Egg
  • 1/4 teaspoonSalt
  • Ground Chilli OR Pepper as required
  • 1/4 cupSelf-Raising *plus extra if required
  • 1 cupEdamame Beans *thawed if frozen
  • 1/4cupful shredded Cheese of your choice *I used Cheddar
  • Oil for cooking

Steps

10 minutes
  1. 1

    Peel Potato and coarsely grate it. Remove excess water and place in a mixing bowl.

  2. 2

    Add all other ingredients and mix well. Add extra Flour if required.

  3. 3

    Heat a generous amount of Oil in a frying pan over medium low heat, form thin pancakes adding Edamame Beans on top of each pancake, and cook for 2-3 minutes OR until nicely browned and crispy, then flip over and cook the other side.

    Sprinkle with Salt as required and enjoy.
