I had learned this from a lacolite in Tamil Nadu. The milky mushrooms work beautifully there because it's firm like meat and vegetable friendly. Typically of Earthy flowers, Gingelly oil, Curry leaves and Freshly ground masalas..

Wash the milky mushrooms and chop into fine pieces.
Heat the pan with sesame oil.
Add mustard seeds to splutter.
Add cloves, cinnoman and animase star.
Add green chillies, curry leaves. Saute for a while. Simmer the flame. Followed by red chilli powder, turmeric and shakthi chicken masala (dont worry it is vegetable).
Add tomato and mushrooms like dices.
Saute for two minutes until the mushroom get shrunken.
Sprinkle required salt powder.
Close the pan with lid. - 2
Allow to cook over a medium flame for two minutes.
Finally add chopped coriander leaves and mix. Mushroom stir fry is ready! take it with hot rice or as a scrumptious side dish to any main dish.
