Ingredients

18-20 servings
  1. 1 cupunsalted butter
  2. 1 cupsugar
  3. 1egg
  4. 1 tspvanilla
  5. 2 canscanned pineapple rings, well drained and dry
  6. 1/2 cupAdditional sugar for sprinkling

Cooking Instructions

    Preheat oven to 350*. Line baking sheets with parchment paper.

    In large bowl cream butter and sugar together until lite and fluffy.

  3. 3

    Beat in egg and vanilla.

  4. 4

    In separate bowl, sift flour, salt & soda. Gradually add to wet mixture, mixing until soft dough forms.

    Roll dough into balls, (1-1/2 Tbsp each) and slightly flatten. Place on baking sheets, leaving space between each.

    Dip each pineapple ring into additional sugar and press on top of each cookie.

  7. 7

    Bake for 14-18 minutes or until edges are golden and the cookies are set.

    Let cool for 5 minutes and then remove from pan to wire rack to completely cool.

    Optional: Use a maraschino cherry in the center. We don’t care for cherries so I used blueberries in the center.

    Store in airtight container up to 4 days.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
