Ingredients

Serves 3 servings
  • 4large eggs
  • Vegetable oil for frying
  • 1 tablespoonsoy sauce
  • 1 tablespoonoyster sauce
  • 1/2 teaspoongranulated sugar
  • 1little tempura flour or all-purpose flour

  1. 1

    Crack the eggs into a bowl. Add all the seasonings and the flour. Beat vigorously until well combined.

  2. 2

    Heat a generous amount of oil in a skillet over high heat until very hot.

  3. 3

    Once the oil is hot, pour the egg mixture through a strainer so it spreads evenly in the pan. Use a spatula to gather the eggs together, or you can ladle the eggs into the pan, drizzling them evenly across the surface.

  4. 4

    Fry until each side is golden and crispy. Turn off the heat.

  5. 5

    Remove the omelet and let it drain on paper towels to remove excess oil.
