Ingredients

  1. 2 cups (1 pint)heavy whipping cream
  2. 1 cupwhole milk
  3. 3egg yolks
  4. 2/3 cupturbinado sugar
  5. 1 tbspvanilla bean paste

Cooking Instructions

    Heat dairy: In a saucepan, whisk together heavy cream and milk. Heat over medium, stirring often, until just under a simmer.

    Blend yolks & sugar: In a blender, combine egg yolks and turbinado sugar until smooth.

    Temper: Slowly stream ~1 cup of hot dairy into the blender to temper the eggs.

    Form custard: Return mixture to the pan and heat to 170°F, stirring constantly until thickened slightly.

    Flavor & chill: Stir in vanilla bean paste, then chill in the fridge until mixture is below 45°F.

    Churn: Pour into ice cream maker and churn until it reaches a soft-serve consistency. Add mix-ins here if desired.

    Freeze & serve: Transfer to a container, freeze for 4–5 hours, then scoop and enjoy!
