Ingredients

  • 4 1/4 cupscooked pinto beans (about 1 liter)
  • 3dried guajillo chiles
  • 2 clovesgarlic
  • 2 teaspoonschipotle chile adobo sauce (optional)
  • 2chipotle chiles in adobo (optional)
  • as neededvegetable oil
  • as neededlard
  • cooked Mexican sausage (longaniza), to taste
  • salt, to taste
  • melting cheese (such as Oaxaca or mozzarella), optional

Steps

  1. 1

    In a pot, heat 1 tablespoon of lard. Once melted, add the cooked beans. Mash the beans with a potato masher or the bottom of a glass until they are refried.

    In a separate pan, heat some oil and sauté 2 cloves of garlic, 3 guajillo chiles, and a small piece of onion until browned.

    Blend the guajillo chiles, garlic, and onion with 1 cup of the bean cooking liquid. If you like, add 2 chipotle chiles and 2 teaspoons of chipotle adobo sauce. Blend until smooth.

    Once the beans are refried, add the chile adobo mixture to the beans. Stir well and season with salt to taste.

    In a pan with a little oil, brown the longaniza sausage. Once browned, add it to the adobo beans. Mix everything well. If you like, top with melting cheese and let it melt before serving. Enjoy!
