Ingredients

6 pancakes
  1. 3/4 cupall-purpose flour (about 85 grams)
  2. 2 tablespoonsunsweetened cocoa powder (about 15 grams)
  3. 1/2 cupmilk (about 125 grams)
  4. 1egg
  5. 2 tablespoonssugar (about 25 grams)
  6. 2 teaspoonsmelted butter (about 10 grams)
  7. 1 teaspoonbaking powder (about 1/2 packet)
  8. 1 pinchsalt
  9. 1/2 teaspoonapple cider vinegar
  10. Chocolate chips, as needed (optional, for an extra touch)

    Gather all your ingredients.

    Separate the egg yolk from the white. Beat the egg white with the vinegar until stiff peaks form, then set aside. Add the yolk. Sift in the cocoa powder and baking powder, and whisk well.

    Gently fold in the milk, using upward motions, then add the flour.

    Melt a little butter in a small nonstick skillet. Pour in a ladleful of batter and cook on each side until done, about 2 minutes per side.

    Peel the orange and slice it. Serve the warm pancakes with orange slices and a generous drizzle of extra virgin olive oil.
