Ingredients

1 hour
2 pieces
  1. 2 tablespoonsolive oil (for sautéing)
  2. enough oil for frying
  3. 1large egg (for breading)
  4. 1/3 cuppanko breadcrumbs (25 grams)
  5. 1/3 cupplain breadcrumbs (25 grams)
  6. 1 teaspoonlemon juice (for the aioli)
  7. salt, to taste
  8. 2/3 cupsunflower oil (150 ml, for the aioli)
  9. 1large egg (for the aioli)
  10. 2.8 ouncespeeled shrimp (80 grams)
  11. black pepper, to taste
  12. 1 pinchnutmeg
  13. 3/4 cupmilk (180 ml)
  14. 1/4 cupall-purpose flour (30 grams)
  15. 2 clovesgarlic (1 for sautéing, 1 small clove for aioli)
  16. 2calçots (or substitute 2 small leeks or 2 scallions)
  17. 1.8 ouncesdesalted salt cod (50 grams)

    Finely chop the calçots and 1 clove of garlic, then sauté them in olive oil.

  2. 2

    Add the shrimp and flaked salt cod, and cook until they change color.

    Stir in the flour, cook briefly, then gradually add the milk, stirring until you get a thick béchamel sauce.

  4. 4

    Season with nutmeg, black pepper, and salt. Continue stirring and cooking until the mixture pulls away from the sides of the pan.

  5. 5

    Let the mixture cool, then shape into balls.

  6. 6

    Dip the balls in beaten egg, then coat with a mixture of plain breadcrumbs and panko.

  7. 7

    Fry in hot oil until golden brown.

  8. 8

    For the aioli, blend 1 egg, 1 small garlic clove (germ removed), salt, lemon juice, and sunflower oil until emulsified.

  9. 9

    Serve the bombas topped with the lemon aioli.
