Crispy Bread Upma

I have failed numerous times to make a delicious portion of bread upma. As a child, i loved the bread upma that my mother made for breakfast. However, despite knowing her recipe, I never could reproduce it. The bread will always get squashy once mixed in the masala. Here is a variation of the south indian dish that would be crispy and tasty!
Crispy Bread Upma

However, despite knowing her recipe, I never could reproduce it. The bread will always get squashy once mixed in the masala. Here is a variation of the south indian dish that would be crispy and tasty!
Steps

Remove the sides of the bread and cut in square pieces.

Put a pan on the stove and add 2 tablespoons of oil.

Saute the bread pieces in the pan till they are golden brown. Keep the bread aside.

Keep a pan on the stove and add 1 tablespoon of oil.

Add the mustard seeds and curry leaves to the oil.

Once the mustard seeds spatter, add the chopped onions.

When the onions are golden brown, add the potatoes and stir.

After sometime, add the other chopped vegetables and mix them well. Let the vegetables cook but allow them to remain crisp.

Add turmeric powder, chilli powder and garam masala to the crispy vegetables and mix well. Add salt to the mix.

Add the bread pieces to the mixture and stir well.

Remove the pan from the flame and squeeze the lemon over the mixture.

Mix the lemon juice and garnish the upma with coriander leaves.

Serve with tomato ketchup or any chutney.
