This is probably the laziest of all the recipes I could make. I didn't want to spend a lot of time in the kitchen on a Saturday, so I put this together quickly in a pot and let it cook. I then served it with warm rice and served the left overs with some aloo paratas and it was good. This is a very light curry!

Ingredients

  • Chicken breast Cooked - sliced
  • Onion - medium diced
  • Tomatoes - fresh or canned
  • 2Green chillies - slit across
  • 1Green capsicum of Red & - each sliced lengthwise
  • 2Potatoes - medium , peeled and chopped
  • 3 clovesGarlic -
  • curry powder
  • Salt
  • Oil

Steps

    In a pot, heat some oil and add the onions. Saute until transparent and add the garlic cloves and green chillies. Next add in the diced potatoes and put in your spoon of curry powder. Add some water for it to cook in. A few minutes later add the tomatoes and more water. Get a stew base together. The capsicums don't take a long time to cook - so when you feel the potatoes are almost done, add the cooked chicken and the red and green peppers and cook. Add the required amount of salt

    The aroma of the garlic and tomatoes is just amazing. If you want more spice, add some chilli powder. This is a simple dish that definitely doesn't take a lot of your time in the kitchen and it tastes great :)
