Prep the faux base
Drain the hearts of palm well and cut them into thin rounds. This is the big secret ✨: visually and texturally, they trick the brain into thinking they are the classic elbow macaroni, but with zero carbs. Pat them dry with a paper towel so they don't water down the salad. - 2
Chop the proteins
Finely shred the chicken breast 🍗 and cut the turkey slices into small squares. - 3
The sweet and salty touch
In a small bowl, mix your fit mayo with the sweetener packet 🥣. Stir well. This perfectly mimics the flavor of the pineapple and sugar from our grandmothers' recipe, but saves us hundreds of calories. - 4
