Ingredients

  • 1 canwhole Hearts of Palm 🥫
  • 150 groasted or boiled chicken breast (leftovers work perfectly) 🍗
  • 4-5 slicesturkey ham (Oscar Mayer style) 🥪
  • 1/2 cupfit mayonnaise (egg white and garlic based) 🥣
  • 1 packetsweetener (Stevia or Monk Fruit) 🍯
  • 1/2onion, finely diced 🧅
  • Roasted red bell pepper, finely diced 🫑
  • 1 handfulpitted olives, halved 🫒
  • 30 gshredded Triple Cheddar cheese 🧀

Steps

  1. 1

    Prep the faux base
    Drain the hearts of palm well and cut them into thin rounds. This is the big secret ✨: visually and texturally, they trick the brain into thinking they are the classic elbow macaroni, but with zero carbs. Pat them dry with a paper towel so they don't water down the salad.

  2. 2

    Chop the proteins
    Finely shred the chicken breast 🍗 and cut the turkey slices into small squares.

  3. 3

    The sweet and salty touch
    In a small bowl, mix your fit mayo with the sweetener packet 🥣. Stir well. This perfectly mimics the flavor of the pineapple and sugar from our grandmothers' recipe, but saves us hundreds of calories.

  4. 4

    Mix with love
    In a large bowl, combine the hearts of palm, chicken, turkey, onion 🧅, bell pepper 🫑, olives 🫒, and cheese 🧀. Pour the sweet-and-salty mayo over everything and mix gently until it's super creamy.

  5. 5

    Chill it
    Cover the bowl and put it in the fridge for at least 2 hours ❄️. Patience pays off! The flavors settle and it tastes a thousand times better when it's really cold. Enjoy! ✨
