Steps
- 1
Initial mixing: In a small bowl, place the liquid cheese and warm water, and mix well with a spoon until the cheese is completely dissolved in the water and the mixture becomes a smooth, liquid consistency.
- 2
Adding the chia: Add the chia flour to the liquid mixture and stir well until the flour is completely incorporated.
- 3
The firming stage (very important): Leave the mixture aside for 5 to 7 minutes. You will notice that the chia seeds have begun to absorb all the liquids, fats, and water from the cheese, transforming the mixture from a liquid to a firm, soft, and pliable dough.
- 4
Cooking (Best Method for Cheese and Chia):
Microwave (Easiest and Fastest): Spread the dough in the bottom of a small (microwavable) dish to form a disc. Microwave for 1 to 1.5 minutes, or until the surface is completely dry and the disc is soft. Flip the bread and return it to the microwave to cook both sides and firm up like a tortilla. It's best to use parchment paper. If you remove it without parchment paper, wait until it cools before flipping.
Tips
You can mix ground tuna with chia seeds and creamed cheese, then mix the tuna into the dough and shape it like a tortilla. Alternatively, after making the tortilla, add the tuna filling and mayonnaise.
