Tamilnadu style Arbi fry/ Seppankizhangu Roast / Arbi Roast is a simple and delicious side dish. Which is perfect for South Indian lunch. It goes best with sambar rice, rasam rice or even curd rice.

First upon wash the arbi well with water, so that all the mud particles are removed. Then pressure cook for 2 whistles with 2 cups of water.

Then cool them down and peel off the skin of arbi. Chop the arbi into small round slices and keep them aside.

Now for the masala, take salt, turmeric powder, red chilli powder, coriander powder, cumin powder, asafoetida, besan, rice flour in a bowl and mix well.

Transfer this masala powder mixture into the arbi slices and mix them well so that the masala coats the slices well. Keep the coated slices aside for at least 5 mins.

Take oil in a wide pan. Add curry leaves, chopped garlic cloves and saute. Then gently drop in the masala coated arbi slices and fry them for a few minutes.

Once the arbi slices are crispy and golden brown on all sides, turn off the stove and serve it.

Now our very crispy and delicious Tamilnadu Style Arbi Fry is ready for serve. Serve with plain rice or curd rice as you like.
