A simple dish of eggplants and Sambal Balado originating from Padang in Sumatra.

You can use any eggplants you like, I like the long varieties.

For the sambal, use what ever heat level of chilli you like but remember Sambal is meant to be predominately chilli.

The Sambal Balado can be used for anything you want to add Sambal to.

Ingredients

  • 3-4Long Eggplants - or use any eggplant you want. Steam then slice into medium rounds/half rounds
  • sambal balado
  • 2Tomatoes
  • 4-5Red Chilies - use a mix of whatever chilies you want to suit your heat preference
  • 2Shallots - or half an onion
  • 2Garlic Cloves
  • 1-2 TspnPalm Sugar
  • 1-2 TspnYum Yum (or Salt)

Steps

  1. 1

    Start by steaming the eggplants. Prick them a few times with a fork and steam them until soft. Slice them into medium bite sized pieces when they are done.

    Make the Sambal Balado with either a traditional smasher or a food processor. It should still be a little chunky rather than smooth. Rough cut the chilies, shallots, garlic and smash into a sambal. Taste and season with Yum Yum/Salt and Palm Sugar. If using a food processor you might need to add a splash of oil to get it all happening

    Fry the Sambal in a hot pan with a little oil

    Fry the sliced steamed eggplant (push the sambal to the side)

    When the eggplants have started to fry up a bit, stir them into the sambal and fry a little longer. Taste and adjust seasoning with sugar/salt to suit your preferences.
