First, mix the gram flour (besan) and water well until you get a smooth batter with no lumps.

Add the chopped vegetables to the batter.

Then add salt, asafoetida (hing), carom seeds (ajwain), and a pinch of baking soda. Mix everything well.

Heat oil in a pan over medium heat. Drop small portions of the batter into the hot oil using your hand or a spoon. The batter should be neither too thick nor too runny.

Fry until the bhajiyas are golden brown and crispy. Remove them and place them on a kitchen towel to absorb the excess oil.

Serve hot with your favorite chutney. Enjoy!
