Bring the milk to a boil and curdle it by adding the diluted vinegar.

Strain the chenna through a muslin cloth and rinse it well to remove the vinegar taste.

Hang it for 20–30 minutes until it is moist but not dry.

Knead the chenna until it becomes smooth and glossy.

Add the suji and knead again for a few minutes.

Shape the mixture into smooth, crack-free balls.

In a wide pan, boil the brown sugar, water, and cardamom powder.

Add the chenna balls to the vigorously boiling syrup, cover, and cook for 15–18 minutes until they double in size.

Allow the rasgullas to cool in the syrup for at least 1–2 hours before serving.
Tips
1.Use full-fat milk for the best texture.
2. Rinse the chenna thoroughly after curdling to remove any vinegar flavour.
3. Knead gently until smooth, but avoid over-kneading.
4. Always add the chenna balls to a vigorously boiling syrup.
5. Let the rasgullas rest in the syrup after cooking so they absorb maximum sweetness and remain juicy.
