Homemade Aloo Bukhara (Persian Dried Plums)

Aloo Bukhara is a traditional Persian dried plum made from fresh plums and naturally dried in the sun.
This is my homemade version, made without sulfur treatment. Naturally dried Aloo Bukhara has a beautiful reddish color and a pleasantly soft, chewy texture.
I love eating it just as it is, but it can also be used in a variety of Persian dishes, especially stews and rice dishes.
These plums came from a family garden, so this recipe is especially close to my heart. 🌿🍑

Wash the plums and remove the leaves and stems.

If the skins do not come off easily, blanch the plums in boiling water for a few seconds, then transfer them to a colander. Do not pile too many plums on top of each other, as the ones underneath may become bruised or crushed. I used several colanders.

Once the plums have cooled slightly, the skins should come off easily.

After peeling, place the plums in colanders or on trays to dry. A raised mesh tray is ideal because it allows air to circulate around the plums from both sides and lets any juice drain away instead of collecting underneath them.

Place the trays in direct sunlight and allow the plums to dry. I turned the plums over once a day because they released some juice.

The drying time depends on how strong the sunlight is in your area. I don't dry my plums until they become completely hard; I prefer to leave them slightly soft and pliable. Mine took about two days to dry.
Tips
Naturally dried Aloo Bukhara is usually red or reddish, while sulfur-treated plums turn yellow. Although sulfur-treated plums have a beautiful color, I personally prefer the naturally dried variety.
