In a large mixing bowl, combine the shredded green cabbage, red cabbage, carrots, diced pickles or pickled jalapeños, corn, fresh jalapeños, cilantro, and green onions.

In a separate bowl, whisk together the mayonnaise, sour cream, salsa verde, lime juice, Dijon mustard, garlic powder, onion powder, cumin, smoked paprika, salt, and black pepper until the dressing is completely smooth and creamy.

Pour the dressing over the cabbage mixture and toss everything together thoroughly until the vegetables are evenly coated.

Cover the bowl and refrigerate for at least 30 minutes so the flavors can blend and the slaw can chill.

Before serving, toss the slaw again to refresh the texture. Garnish with extra jalapeño slices, fresh cilantro, and a light drizzle of salsa verde if desired.
Tips
Shred your cabbage as thinly as possible so the dressing coats it evenly. Drain canned corn very well so it doesn't water down your dressing. For extra flavor and crunch, sprinkle crumbled cotija cheese, crushed tortilla chips, or Tajín seasoning over the slaw right before serving so they stay crisp!
