Persian Chicken and Okra Stew

A simple, comforting Persian stew made with chicken, okra, tomato paste, and sour grape juice (abghooreh).

The slightly sour flavor of abghooreh is one of my favorite parts of this dish, and I think it pairs especially well with okra. Fresh lemon juice can be used instead, but if you can find abghooreh, I definitely recommend trying it this way.

Like many Persian stews, this one is best served alongside a plate of fluffy Persian chelo. ❤️

Ingredients

  • For the Stew
  • 2whole chicken legs (thigh and drumstick)
  • 200 gcleaned okra
  • 1medium onion
  • 2 tbsptomato paste
  • 1 tspground turmeric
  • 1/2 tspground black pepper
  • as neededSalt
  • as neededWater
  • as neededSour grape juice (abghooreh)
    Homemade Verjuice (Abghooreh) – Boiled Method
  • For the chelow
  • 480 glong-grain rice
  • 3 tbspoil
  • as neededSalt
  • as neededWater

Steps

1 hour 30 minutes

    Carefully remove the caps from the okra. Sometimes I don't remove them at all, and I swear, nothing goes wrong! 😂😂

    Fry the okra in a little oil until lightly browned.

    Finely chop or coarsely grate the onion, then sauté it in a little oil.

    Add the tomato paste and sauté until it becomes nicely colored and fragrant.

    Add the spices and sauté briefly until fragrant. Add the salt as well.

    Add the chicken and lightly brown it.

    Add enough water to come about halfway up the chicken, then add some sour grape juice (abghooreh). I used 1 tbsp of abghooreh.

    Add the fried okra during the last 30 minutes of cooking and let it cook until tender.

    The finished stew should have a moderate amount of sauce—not too watery and not too dry. Taste and adjust the salt and sourness to your liking.

    Serve with Persian steamed rice (chelow) and enjoy! For the abkesh method, see my Chelo recipe.

Tips

You can use fresh lemon juice instead of sour grape juice (abghooreh), but I find that the flavor of abghooreh pairs better with okra.
