Over medium heat, roast rice flour in 2tbsp coconut oil. Just for 2 minutes. Transfer to a bowl. Add turmeric and a pinch of salt.. Add boiling water little by little and knead well. There should be no lumps. Well kneaded dough does not stick to hands. Cover with a damp cloth; let rest for 10 minutes.

Roast shredded coconut in a kadai over medium heat until aromatic, 2-3 minutes. Add monk fruit sweetner and powdered jiggery. Mix. Transfer to a bowl. Add. Add ¼ of this to the rice flour dough. Knead together; if needed add a few drops of hot water. Knead well to make it smooth and pliable

MAKING MANI KOZHUKATTAI: Pinch about a tbsp DOUGH, ROLL IN ON A GREASED PALM to make a ball/mani kozhukattai. make small balls with your fingers. Do not press hard. Make soft balls--dumplings. alternatively, you can make a rope, cut into small pieces, roll each piece into a manikozukattai. cover them with a damp cloth until you are ready to drop them into payasam.

Bring 2 cups of water to a boil in a saucepan over medium heat. Then add 3 cups of almond milk and let it boil Add the dumplings to the boiling milk After 2 minutes reduce the flame. Let the milk boil. When cooked, dumplings will float. Add the remaining coconut sugar jiggery mix. Add cardamom, saffron and grated nutmeg to the boiling payasam. Let the milk boil and thicken a little. Delicious dumplings will be ready in 10 minutes. Turn off the stove.

Fry cashew nuts in 2tbsp ghee in a saucepan over medium heat until the color changes. Add raisins. raisins will swell. about 2 minutes. Turn off the stove. Add this to the payasam. Transfer the payasam to a serving bowl offer it as prasad -neivediyam in sanskrit. Say Ganeshaya Nama ohm. Share with friends and family
