Grilled Kofta Fingers with Vegetables

Place the ground lamb and grill spice mix in a large bowl.

Finely chop the onions and tomato using a vegetable chopper.

Add the chopped onions and tomato to the lamb and mix everything together.

Shape the meat mixture into finger-shaped kofta pieces.

Slice the tomatoes and eggplant, then arrange them in a baking pan. Lightly brush the bottom of the pan with oil.

Roast the kofta and vegetables in the oven at 400°F (200°C).

Serve the dish hot and enjoy.
