To make the bread: Rub the flour well with the oil using your fingertips for about 5 minutes until fully combined.

Add the salt and mix, then knead with the milk until you have a soft, smooth dough. Cover and let it rest for 1 hour.

Marinate the beef with the listed ingredients and refrigerate for at least 4 hours.

After 1 hour, roll out the dough on a floured surface until thin. Cut into circles using a round plate. Heat a skillet over medium heat.

Cook the dough circles on both sides until golden, then remove and keep the flatbreads wrapped in a clean cotton kitchen towel or covered in a pot to keep them soft until ready to use.

Prepare the sauce by mixing all the ingredients together.

Heat a skillet over high heat. Add the marinated beef, cover, and cook on low heat until done. If the liquid dries out, add a little water to ensure the meat is fully cooked.

Spread the flatbreads with the sauce, add the beef shawarma, and top with pickles, fried potatoes, and onions as desired. Roll up and serve.

If you like, brush the wraps with butter and bake in the oven for 5 minutes. I skipped this step, but it’s optional.
