Ingredients

40 minutes
6 servings
  • 2 cuphalf cooked basmati rice
  • 150 gramspaneer cut in cubes
  • Cauliflower, beans, carrot, capsicum and green peas all cut in
  • equal size and blanched
  • 4big size onion finely sliced
  • 1 1/2 tbspginger garlic paste
  • 3-4green chilli paste
  • 1long stick cinnamon
  • 2-3green cardamom
  • 4-5black pepper
  • 2-3cloves
  • 1 tbspbiryani masala
  • 1 tspred chilli powder
  • 1 tspbiryani essence
  • 10-12threads of saffron soaked in milk
  • 2 tbspoil
  • 2 tbspbutter
  • 4 tbsppure ghee
  • 1/2 cuphung curd
  • 10-12cashews
  • Salt

Steps

40 minutes
  1. 1

    Take a pan or kadai heat oil and butter and add all the whole masala

    When it starts cracking add 2 sliced onion and fry. Sauté a bit and then add paneer cubes and fry till both changes there color

    Add all the blanched vegetables and cook for few minutes

    Add ginger garlic and green chill paste and mix it well with light hands

    Soak saffron in lukewarm milk

    Add all the dry masala and toss it well

    Add curd and mix well

    Take a heavy bottom pan and start arranging the biryani. First layer cooked vegetables and second layer rice

    Take another pan and deep fry 2 sliced onions and cashews till brown in color

    Now arrange the biryani in same manner and then add biryani essence and soaked saffron

    At the last place the fried onions and cashews

    Close the pan with a lid so that it's airtight and let it cook on low flame for 10 minutes

    The biryani is ready to serve. Serve it with raita and salad
