Boil the potatoes. Peeloff and set aside.

Peel of the mango and extract its pulp.

Chop the tomato.Add a bit of butter in a frying pan and gently add mango pulp half of the sugar and tomato.Cook for a few minutes till the material thickens. Add cinnamon powder and remove from the flame.

Now scoop out the middle part of the boiled potatoes. Pour the mango tomato mixture into the scooped portions

Put the remaining butter and sugar on a frying pan heating on the flame.Put the potatoes with the part opened upside down.When the side gets a caramelized look gently turn down the other side and cook in a same way.

Remove from the flame. Turn the scooped -cooked part at top and serve.
