I don't enjoy eating whole corn on the cob and found this an easy and tasty alternate way of serving and enjoying fresh corn. This can be a starter, a side dish or the main part of a light meal perhaps with pieces of bacon or grated cheese

Remove the outer leaves and rinse the cobs

Using a sharp knife carefully cut the corn from the central core. I found this easier than I expected but take care!

The corn can be rinsed agiain

Grate the ginger, crush the garlic and chop the spring onion
- 5
Add the spring onions and continue to cook for about 4 minutes.

Heat the oil in a shallow pan and saute the corn for 4-5 minutes. Add the soy sauce, ginger and garlic, stir well while continuing to saute.

Serve as required. It will also keep if cooled and placed in the fridge and reheated the next day.
