Fava (yellow split peas) is very tasty. It has the texture of cream (or purée) and it is usually served as an appetizer or meze for ouzo as well as a main course.

Wash the yellow split peas 2-3 times. Place in a pot with water (to cover the peas and add more water equal to that already in the pot). Keep on checking as it boils because it froths and swells which will make the stove top a mess!

Collect the froth regularly and discard. Add the olive oil, salt and onions.

Then simmer for 1-1.5 hours, until it thickens

When ready, pulverise it in a purée in a mixer (with the onions).

Serve in a plate, drizzle with olive oil, dress with lemon and chopped onion. If you wish, add oregano or thyme, sun dried tomato or capers.
