A country-style Greek potato stew, or as we call it Patates Yahni.

Quarter the potatoes, and sprinkle them with the lemon juice.

In a pot, heat the oil and lightly sauté the onion and garlic.

Add the chopped tomatoes, allow to simmer for a few minutes.

Add the potato pieces, the salt, pepper, parsley and other flavourants to your liking. If you think there is not enough liquid, add some water. Not too much, just enough for the potatoes to cook through.

Let simmer for approximately 40 minutes, (time will depend on the size of the potato pieces), till the potatoes are tender. Check regularly to see that the potatoes have enough liquid in which to boil. In the end we want them to have a nice, thick sauce.
