Rinse the brown rice thoroughly to remove any dust. Toast the rice in a pot over medium heat until fragrant, but be careful not to burn it.

Add 1 2/3 cups water (about 400 ml) to the toasted rice in the pot. Cook for 10-15 minutes until the rice softens and expands.

In a separate pot, combine the rock sugar with 2 1/2 cups water (about 600 ml). Heat until the sugar dissolves completely.

Once the rice is cooked, blend it in a blender until smooth. Strain the mixture through a fine mesh sieve into the pot with the sugar water. You can add a little extra water to help with straining. Strain again for a smoother texture.

Add the unsweetened milk to the pot and heat gently until just simmering.
